1 3-oz. package Lemon Jello
1 cup boiling water
3/4 cup good quality Lemon Vodka, I like Hangar One
1/4 cup cold water
Cut each lemon in half and hollow out down to the white pitch taking extra care not to puncture the skin. Place the halves in a muffin pan or large tray filled with rice or dry beans to keep them upright and level for filling. Chill in refrigerator while making Jello filling.
Make the Jello according to the package directions, except in place of the cup of cold water, substitute 3/4 cup of Lemon Vodka, along with 1/4 cups of cold water. Transfer to container with a pouring spout to make for easier filling. Fill each lemon half and refrigerate for at least 4 hours or overnight.
Once the Jello is completely set, use a sharp knife to slice into wedges and serve.
